Recioto di Soave (Italy)

Dry White Grapes

Recioto refers to wines made from dried grapes, late harvest grapes or wines affected by noble rot.

The term Recioto is traditional to the Veneto region of Italy where Recioto wines are naturally sweet wines.

The most important wines are Recioto della Valpolicella, and Recioto di Soave.

Recioto di Soave is a sweet white from the same grapes as the dry Soave: Garganega (70%) and Trebbiano di Soave (30%).

About Recioto di Soave

Recioto di Soave is a straw wine made of dried grapes with ancient origins.

The name comes from dialect "recia" (ear), indicating the part of the bunch used to hang it when drying (hanging by the ears).

In 1998, it was the first wine in Veneto to receive DOCG denomination.

Grapes are hand-picked, spread out on mats and left to rest for 5-6 months in drying rooms (fruttaio).

Gently pressed and fermented, the juice will have to spend at least one year in oak barriques before beeing bottled.
