Opt for cheeses with moderate saltiness and creaminess to balance the wine's acidity. You can also add accompaniments like fresh fruits (grapes, apples, pears), nuts (almonds, walnuts), or a light drizzle of honey to enhance the pairing.
Mozzarella: Its delicate flavor pairs well with the wine's lightness.
Ricotta: Especially good if served with a drizzle of honey or fresh fruits.
Goat Cheese (Chèvre): The tanginess complements the subtle fruit notes in Frascati.
Fontina: Its nutty, buttery qualities make a good match.
Brie: The creamy texture and mild flavor work beautifully with Frascati.
Camembert: Similar to Brie but with slightly more earthiness.
Asiago: Lightly aged Asiago adds a complementary tang to the wine.
Manchego: A classic Spanish pairing, especially younger Manchego, which is less intense.
Gruyère: Mildly nutty and sweet, enhancing the wine's subtlety.
Robiola: Its mild creaminess contrasts nicely without overpowering the wine.
Frascati is made both dry and sweet, both still and sparkling.
The dry wines are labeled Novello, Superiore, or Novello Superiore.
They are made from minimum 50% Malvasia grapes, and up to 50% of other grapes like Trebbiano, Greco, Bellone, or Bombino.
Malvasia grapes add citrus. Trebbiano grapes add floral notes and acidity.
Some wines are acidic, some are floral, while others are fruity, depending on the grapes used.
The minerality comes from the volcanic soils of the Castelli Romani (Roman Casteles) area.
Since 2011 there are 2 DOCG.
Frascati Superiore (dry). Minimun 70% Malvasia grapes. Minimum ABV 12%.
Cannelino di Frascati is a sweet wine made with botrytized grapes.
Lazio has a diverse landscape that includes coastal plains, hills, and mountains.
The region has a Mediterranean climate with hot, dry summers and mild, wet winters.
The proximity to the Tyrrhenian Sea also influences the climate with cooling maritime breezes.
