Probus is a Serbian crossing of Kadarka and Cabernet Sauvignon.
The wines are deeply colored, full bodied, tannic, and dominated by dark fruit such as blackberry, plum, blueberry and sour/black cherry, often with spice, chocolate, tobacco, and oak notes.
Probus also has particularly high tannin and anthocyanin levels.
Dark Berries, Plum, and Black Cherry are typical Probus flavors.
With hints of Spice, Chocolate, and Tobacco.

Divljač (game). Venison or wild boar is excellent, particularly with an oak-aged Probus. Serbian Probus recommendations specifically mention game.
Leskovačka mućkalica (my favorite). Grilled meat cooked with roasted red peppers, tomato, onion and paprika. The smoky, spicy character works beautifully with Probus.
Jagnjeće pečenje. Serbian spit-roasted lamb is an excellent match.
Praseće pečenje. Roast suckling pig, especially with crispy skin.
Ćevapi / ćevapčići (the rich Leskovac style). Small, skinless grilled sausages made from minced meat. They are one of the best-known traditional foods of Serbia and the wider Balkans. Served with onion and kajmak.
Leskovačka pljeskavica (especially gurmanska pljeskavica with bacon. This charred meat, fat and spice are excellent against Probus's tannins and dark fruit.
The Bordeaux Glass was designed for enjoying fuller-bodied, tannic red wines.

They are taller than other red wine glasses, and has a slimmer bowl.
The slimmer bowl directs the wine to the back of your mouth for a maximum taste. The size also allows the bouquet of the wine to develop, smooth out rough edges, play down tannins, and allow the wine to achieve balance. |
