Vin Jaune is a dry, white dessert wine made in the Jura region in France.
Vin Jaune is similar to fino Sherry and gets its character from being matured in a barrel under a film of yeast.
It shares many similarities with Sherry, including some aromas, but unlike Sherry, it is not a fortified wine.
Maturation under yeast results in a Yeasty flavour profile with notes of Nuts, Toast, Cerry and Mushroom.

The AOC regions permitted to produce Vin Jaune (since 1936) include:
The grapes are harvested in late October when the sugars have developed enough to have alcohol level of 15% for the finished wine.
The grapes are fermented slowly in small old oak casks of 228 liters. The casks are not filled totally up, and a film of yeast grows over the wine, protecting it from oxidation. The film is similar to the "flor" from the Sherry production.
Jura is a small French wine region located between Burgundy and Switzerland. This cool climate wine region produces wines with some similarity to Burgundy.
