Fermentation and Maturation Vessels

Steel Tanks

Steel Tanks

The choice of vessels play a crucial role in shaping the style, quality, and price of wine.

Stainless Steel

Stainless steel tanks are a versatile and practical tool in winemaking, particularly well-suited for producing fresh, fruit-forward wines with a focus on purity and consistency.

The ability to control temperature, prevent oxidation, and maintain hygiene makes them ideal for many wine styles, especially aromatic whites and light reds.

Fermenting and storing wine in stainless steel allows the producer to keep primary flavors and the crispness and purity of the fruit.

Stainless steel is hygienic and easy to clean. They can be cooled down with cooling systems, they are movable and can be custom made to any size.

Neutrality

Stainless steel tanks are inert, meaning they do not impart any flavor or aroma to the wine. This is in contrast to oak barrels, which contribute flavors like vanilla, spice, or toast.

Wines made in stainless steel tanks tend to have a cleaner, crisper profile, with the focus on the fruit and varietal characteristics. This makes stainless steel ideal for aromatic white wines (e.g., Sauvignon Blanc, Riesling) and lighter red wines (e.g., Beaujolais), where the purity of fruit is desired.

Temperature Control

Stainless steel tanks can be easily fitted with temperature control systems, allowing winemakers to precisely manage fermentation temperatures. This is especially important for controlling the speed of fermentation and preserving aromatic compounds in the wine.

By controlling fermentation temperatures, winemakers can retain the freshness and delicate aromas in white wines and rosés. Cooler fermentation can help preserve esters and fruity aromas, leading to more vibrant and aromatic wines.

Oxidation

Stainless steel tanks are airtight and protect the wine from exposure to oxygen. This is beneficial for preserving the freshness and acidity of the wine during both fermentation and storage.

Wines produced in stainless steel tend to have higher acidity and freshness, making them ideal for styles that are meant to be consumed young. This is particularly important for preserving the bright, zesty qualities of wines like Sauvignon Blanc or unoaked Chardonnay.

Hygiene

Stainless steel is easy to clean and sanitize, which reduces the risk of contamination and spoilage. The excellent hygiene properties of stainless steel help ensure that wines are free from microbial spoilage and off-flavors. This consistency is crucial for maintaining wine quality and ensuring that each batch remains true to the winemaker's vision.

Versatility

Stainless steel tanks can be used for both fermentation and storage, making them highly versatile in the winemaking process. They come in various sizes, allowing winemakers to manage different batch sizes with precision.

The versatility of stainless steel tanks enables winemakers to produce a wide range of wine styles, from simple, fruit-driven wines to more complex, structured wines. The ability to manage different batches separately also allows for greater experimentation and blending.

Cost

Stainless steel tanks represent a significant upfront investment, but they are cost-effective in the long term due to their durability and low maintenance costs. Unlike oak barrels, which need to be replaced after several uses, stainless steel tanks can last for decades.

Stainless Steel Aging

Wines aged in stainless steel often retain more of their primary fruit characteristics but can develop secondary aromas from lees contact (sur lie aging).

Stainless steel tanks provide an airtight environment, minimizing oxygen exposure during aging. This helps preserve the wine's freshness, vibrant fruit flavors, and natural acidity.

Unlike oak barrels, stainless steel tanks do not impart any flavors or aromas to the wine. This neutrality allows the true expression of the grape varietal and the winemaker's intended style to shine through.
