Italian Grapes

Colorino

Pardina

Colorino is a black Italian wine grape variety planted primarily in Tuscany.

Colorino is most noted for the minor role it has played in Chianti blends, especially for proucers using the governo method. This technique involves saving a batch of harvested grapes and allowing them to partially dry. When fermentation of the main batch starts to slow, the half dried grapes are added to the must which then gives the yeast cells a new source of sugar to enliven the batch.
