Ice Wine is a very sweet dessert wine, made from grapes that have been picked and pressed when frozen.
True Eiswein must be picked in December or January, the middle of the night, after two days of frost.
Unlike other dessert wines like Trockenbeerenauslese, Sauternes, and Tokaji, Ice Wine grapes should not be affected by Botrytis Cinerea or Noble Rot. Only healthy grapes can survive until harvest, in extreme cases after Chistmas or New Year.
Ice Wine is always a very sweet wine made from frozen grapes. This concentrates the sugar, reduces the weight, and produces very sweet wines.
Germany and Canada (Ice Wine) are the world's largest producers of Ice Wine.
Ice Wine can be made from many types of grapes like Vidal and Chardonnay (Canada), Cabernet Franc and Merlot (Canada, USA), and even Cabernet Sauvignon (Canada), but the most common and most famous is German Riesling Eiswein.
